What’s Cooking in the Desert – Cooking Class
“What’s Cooking in the Desert” presents traditional Austrian Christmas Dinners in Joshua Tree, California!What do Schinken, Nudelsuppe, Schnitzel, and Stollen have in common? Two traditional Austrian Christmas dinner events in the desert on December 11 and December 16, with Austrian Personal Chef Karin Winkler, in cooperation with the “Rosebud Ruby Star Bed & Breakfast” . Austrian Cuisine, a bit of old world tradition, in Joshua Tree, California. For those in search of their own special Christmas memories this holiday season, there is no need to fly all the way to Vienna, a short trip to the desert does the trick.
On December 11th and December 16th, Sandy Rosen, artist and owner of the “Rosebud Ruby Star Ranch” will provide overnight accommodations for a very special and unique dining experience with Karin Winkler, a Personal Chef specializing in Austrian cuisine. “Whats Cooking in the Desert” presents two traditional Austrian Christmas dinners in the desert wonderland of Joshua Tree, California.
|Take a break from the city with it’s frantic Christmas shoppers and treat yourself to this fine dining adventure that is offered with the option of over night stays in artist-embellished guest rooms in a gorgeous desert surrounding which will intrigue your curiosity. Personal Chef Karin – a native from Austria – will cook an elaborate authentic Austrian Christmas meal for guests to enjoy. Think of these special dinner events as a wonderful vacation for guests who want to taste homemade authentic meals with history and experience the countryside as a refuge for quiet traditions.Cost for dinner only participant is $75 per person, for dinner participants including room accommodations and breakfast is $245 to $345 per person; cost for companion sharing a room is $89.
Traditionally in Austria, after Christmas Eve dinner is served, the ringing of a bell signals the opening of a door that was long locked for the children. For the first time they are permitted to look at the beautifully decorated Christmas tree, who’s candles have been mysteriously lit by the Christkindl (Christ child), that came through the open window and brought all the presents that surround the bottom of the Christmas tree. Our dinner participants will be treated to a similar event with a traditionally decorated dining room and a lovely gift to be opened after dinner.

- Wiener Schnitzel (Viennese Veal Cutlets):
Breaded veal cutlets, fried to golden perfection. They are the ne plus ultra of the Viennese cuisine. The cutlets are garnished with bright lemon wedges and a dash of cranberry sauce. They are delicious with buttered parsley potatoes and/or rice and they are served the traditional way with leaf or cucumber salad.
- Rindsgulasch (Beef Gulyas):
The awesome taste of onions gives an extravagant commendation to this so traditional dish. It is perfect with boiled potatoes or Nockerln (Spätzle) – the picture shows them with the famous Viennese “black Nockerln”. Also very good are noodles or Semmelknödel (white bread dumplings) or Serviettenknödel (napkin dumplings) with the Gulyas.
- Steirisches Wurzelfleisch (Styrian Pork with Roots):
The famous Styrian Pork is named after “Styria”, which is an Austrian province in the Southern part of the country. Our ‘Governator’ Arnold Schwarzenegger was born and raised there. It is cooked in soup with chopped root vegetables and served with grated horseradish and parsley potatoes.
- Gefüllte frische Gurken (Stuffed Cucumbers):
Fresh cucumbers are stuffed with ground meat and simmered in freshly made onion/parsley sauce. They are accompanied with boiled potatoes.
This dish IS low fat & low calorie!
- Gedämpfte Hühnerbrüstchen mit Champignons (Breast of Chicken with Mushrooms):
Breasts of chicken are browned and then simmered in a delicious mushroom sauce. Side dishes are either: rice, rice with green peas or stewed fruit.
Excellent for the chicken lover.
- Windringerl (Meringues):
These are famous all over the world, especially light and have NO fat and NO flour.
There is even an Austrian author (Adelheid Dahimène) who calls her soul a snow-white Meringue, which is a beautiful analogy to this wonderful pastry: pristine, fragile, volatile.
